OLIVE VERMOUTH
Naturally, we were inspired by dirty martinis for this vermouth. We wanted to recreate that savory and briny-ness of olives, with a complex depth provided by the many herbs that’ll remind you of marinated olives. Castelvetranos are indisputably the best, so we infused heaps of those, and used their brine to kick it up a notch. Kombu, a type of seaweed known for amplifying flavors and adding umami, was added to round out the flavors and help the savoriness of the olives really pop.
Perfect for dirty martinis, but because of its complexity and umami, Olive Vermouth can be used in many cocktails to lend a savory note or amplify other flavors. It’s versatile - don’t think it needs to be used only in savory cocktails. Try adding a splash to fruity, smoky, or bitter drinks to see what happens.
TOMATO VERMOUTH
We brought in two types of tomatoes in 2023 - Purple Cherokee Heirlooms for their decadent, savory meatiness, and Early Girl Tomatoes for their concentrated flavor and perfectly balanced acidity. These were infused in grape spirits for a few months before pressing and mixing with our 2023 Chardonnay and barrel aged for 5 months. In May of 2024, we picked young tomato leaves to infuse, which lend an herbal, vegetal, and almost minty character. That was rounded off with Kombu (a type of seaweed) to give it a touch of brininess and amp up the umami, and a quick infusion of red beets, which impart a pleasant earthiness and a tinge of color to the vermouth.
The result is unique, delicate, and bright. On the nose, you get the savory note of the aromatic tomato leaves. On the palate, you’ll notice the flavor of the young tomato leaves, followed by a distinctly tomato finish that lingers.
Perfect in tomato martinis, but can also be used in place of any dry vermouth for a super savory tomato kick. Use it in savory cocktails to amplify umami, or mix it with citrus or fruit flavors to build depth and complexity.
